Recipe for Mango Rabdi

INGREDIENTS

  • 1 Litre Milk (Doodh) (whole milk)
  • 2 Pieces Mango (Aam) (Alphonso or Kesar)
  • 1 Teaspoon Cardamom Powder (Elaichi)
  • Saffron (Kesar) (a few strands dissolved in 1 tbsp milk)
  • 1 Tablespoon Almonds (slivers)
  • 1 Tablespoon Pistachios (slivers)
  • 1 Cup Sugar

METHOD

  1. Heat the milk in a pan and boil till it reduces to ¼th its volume, while stirring occassionally.
  2. Let the milk cool down and then add sugar, Cardamom Powder, Saffron Threads and Mango pieces. Mix well and refrigerate for two hours.
  3. Garnish with almonds and pistachios. Serve chilled.
