Recipe for Hara Bhara Kebab

INGREDIENTS

  • 2 Cups Spinach
  • 2 Pieces Potatoes (medium sized)
  • 2 Cups Green Peas (Matar)
  • 1 Teaspoon Chaat Masala
  • 1 Teaspoon Dry Mango Powder (Amchur powder)
  • 1 Teaspoon Ginger (paste)
  • 1 Teaspoon Green Chillies (paste)
  • 3 Tablespoons Besan
  • Salt to taste
  • Oil for shallow frying

METHOD

  1. Blanch the spinach in hot water for 2 minutes. Drain and wash them in a cold water. This ensures that the spinach retains its colour.
  2. Finely chop the spinach and keep aside.
  3. Dry roast besan in a small pan till it becomes light brown in color.
  4. Boil the potatoes and peas. Grate or mash the potatoes and keep aside.
  5. Combine the spinach, potatoes, peas, ginger-green chili paste, dry mango powder, besan, chaat masala and salt. Mix well.
  6. Divide the mixture into small portions and shape each portion into a round tikki.
  7. Shallow fry the tikkis using oil, till golden brown spots appear on bothe the sides and they are thoroughly cooked.
  8. Serve with green chutney.
