Recipe for Dadpe Pohe

Maharashtria style breakfast recipe. Perfect for days when you want to rush to work.

1 Cup Fresh Coconut (Nariyal) (grated)
2 Cups Flattened Rice (Poha)
½ Cup Onions (Pyaaz) (finely chopped)
1 Tablespoon Oil
1 Teaspoon Sugar (Shakar)
4 Pieces Green Chillies (chopped)
2 Tablespoons Lemon juice
Salt to taste
2 Tablespoons Sev to garnish
Keep the poha in a strainer and rinse it under running water. This causes the poha to absorb water and become soft. Ensure that do not make it too soft and mushy.
Combine the poha with grated coconut and onions. Mix well.
Heat the oil in a deep non-stick pan, add the green chillies and saute.
Add the prepared poha mixture, sugar, lemon juice and salt. Mix well and cook till the poha becomes soft.
Serve hot garnished with sev.
