Recipe for Antioxidant Rolls

Its a roll packed with the goodness of antioxidants from colourful vegetables like red cabbage, broccoli and bellpeppers. It makes for a perfect tiffin snack for your kids or have it as a light dinner with a bowl of lentil soup. Each roll is 98 calories only !

INGREDIENTS

  • ¼ Cup Onions (Pyaaz) (sliced)
  • 1 Teaspoon Garlic ( लहसुन) (finely chopped)
  • ½ Cup Red Capsicum (finely chopped)
  • ½ Cup Yellow Capsicum (finely chopped)
  • 1 Cup Red Cabbage (shredded)
  • 2 Teaspoons Oregano
  • 2 Teaspoons Chilli Flakes (मिर्च के गुच्छे)
  • 6 Teaspoons Tomato Ketchup
  • Salt to taste
  • Pepper to taste
  • 2 Teaspoons Oil
  • 6 Pieces Whole Wheat Chapatis
  • Butter for roasting
  • 1½ Cups Broccoli (blanched florets)

METHOD

For The Stuffing

  1. Heat oil in a deep non-stick pan, add garlic and sauté.
  2. Add onions and cook on a medium flame till they turn translucent.
  3. Add the red and yellow capsicum, mix well and cook on a medium flame for 1 minute.
  4. Add the cabbage and broccoli, mix well and cook on a medium flame for 2 minutes.
  5. Add the herbs, chilli flakes, salt and pepper, mix well and cook for a medium flame for 1 – 2 minutes.
  6. Transfer the mixture in a bowl and keep aside.

To Assemble

  1. Keep one chapati on a clean dry surface and spread 1 tsp of tomato ketchup on the chapati evenly.
  2. Place the prepared vegetable mixture in the centre of the chapati and roll it up
  3. Repeat the same to make 5 more rolls.
  4. Roast the rolls using a little butter till golden brown spots appear on both the sides of the roll.
  5. Serve.
