Recipe for Rawa Idlis

This is what I make for more kids when they crave for a quick hot snack. Just combine all the ingredients to make a batter and steam it to yield soft fluffy idlis. Tastes best when served with Coconut chutney and Sambhar. If you really don't have the time to make any chutney just stick to a simple green chutney.

INGREDIENTS

  • 1½ Cups Semolina (Rawa)
  • ½ Cup Curd (dahi)
  • ¼ Cup Cashwenuts (Kaju) (finely chopped)
  • 2 Tablespoons Raisins (chopped)
  • ½ Teaspoon Fruit Salt
  • Salt to taste

METHOD

  1. Dry roast the rawa for 2 - 3 minutes. Allow it to cool and combine it with 3/4th cup water, cashewnuts, curd and salt. Mix well and keep aside for 30 minutes
  2. Add the raisins. If the batter appears to be too thick then add some water.
  3. Add fruit salt to the batter, sprinkle some water on top and mix lightly.
  4. Pour the batter in greased idli moulds immediately.
  5. Steam for about 10 minutes or till the idlis are done.
  6. Scoop the idlis using a sharp knife or the back of the spoon and serve hot with coconut chutney and sambhar.
