Recipe for Tofu and Capsicum Toast

A wholesome snack with a perfect blend or protein, calcium, fibre and carbohydrates. Makes for a great tea time or a breakfast snack, plus its only 278 kcal for 2 slices of toast. Combine it with a hot cup of tea or coffee.

Synonyms : Tofu, capsicum and a spinach stuffing made using white sauce and herbs on the base of a whole wheat toast.

  • 2 Cups Mushroom (finely chopped)
  • ¾ Cup Tofu (cubed)
  • 2 Cups Spinach (finely chopped)
  • 2 Teaspoons Green Chillies (Hari Mirch) (finely chopped)
  • ¼ Cup Spring Onion (finely chopped)
  • ½ Cup Green Capsicum (Shimla Mirch) (finely chopped)
  • 1 Cup White Sauce
  • 6 Pieces Multigrain Bread
  • ½ Teaspoon Pepper
  • 1 Teaspoon Oregano
  • 1 Teaspoon Chilli Flakes
  • 2 Teaspoons Oil
  • Salt to taste


  1. Heat oil in a broad non-stick pan, add the green chilies and spring onions. Saute for a minute.
  2. Add capsicum and cook on a medium flame for 2 minutes while stirring occasionally.
  3. Add the mushrooms and spinach. Mix well and cook on a medium flame for 2 - 3 minutes while stirring occasionally.
  4. Add the tofu, salt and pepper. Mix well and cook on a medium flame for 1 - 2 minutes.
  5. Add the white sauce, mix well and cook on a medium flame for a minute.
  6. Lightly toast the bread and spread the mixture on the toasted bread. Sprinkle some oregano and chili flakes on top.
  7. Serve hot.
