Recipe for Akuri

A traditional recipe of eggs made the Parsi way. Its the ingredients of the Akuri that makes it different from a regular egg bhurji. Combine this spicy egg dish with a slice of multigrain bread of hot chapatis. Makes for a great wholesome breakfast option !

INGREDIENTS

  • 2 Pieces Egg Whites (whipped)
  • 1 Tablespoon Onions (Pyaaz) (finely chopped)
  • 1 Tablespoon Green Capsicum (Shimla Mirch) (finely chopped)
  • 2 Tablespoons Tomatoes (Tamatar) (finely chopped)
  • ¼ Teaspoon Red Chili Powder (Lal mirch )
  • 1 Teaspoon Green Chillies (finely chopped)
  • ¼ Teaspoon Turmeric Powder
  • 1 Tablespoon Coriander Leaves (chopped)
  • 1 Teaspoon Oil
  • Salt to taste

METHOD

  1. Heat the oil in a broad non-stick pan, add the onions and capsicum, Saute.
  2. Add the tomatoes and cook on a medium flame for 1 minute while stirring occasionally.
  3. Add the green chili, red chili powder, turmeric powder, salt and coriander. Mix well and cook on a medium flame for 1 - 2 minutes.
  4. Pour the egg whites and keep stirring on a slow flame for 1 - 2 minutes or till done.
  5. Serve hot with bread or chapati.
