Recipe for Paneer and Veggie Salad

If you are somebody who likes to watch their weight. Then gorge on this vibrant and delicious salad made using the perfect combination of protein rich paneer and vegetables. The simple dressing with a little garlic and chili flakes gives a necessary spike to this salad. Easy to make and refreshing to eat.

INGREDIENTS

  • 2 Cups Tomatoes (Tamatar) (chopped)
  • 2 Cups Iceburg Lettuce (torn into pieces)
  • 1 Cup Green Peas (Matar) (boiled)
  • 1 Cup Green Capsicum (Shimla Mirch) (cubed)
  • 2 Teaspoons Garlic ( लहसुन) (finely chopped)
  • 3 Tablespoons Lemon juice (Nimbu ka ras)
  • 1 Teaspoon Chilli Flakes
  • 2 Teaspoons Olive Oil
  • Pepper to taste
  • 1 Cup Corn Kernels (boiled)
  • Salt to taste

METHOD

To make the dressing

  1. Combine garlic, lemon juice, chili flakes, olive oil, salt and pepper in a small bowl.
  2. Mix well and keep aside

To assemble the salad

  1. Combine the lettuce, tomatoes, green peas, capsicum, corn and paneer in a big bowl. Mix well.
  2. Pour the prepared dressing over the salad, toss well and refrigerate.
  3. Serve chilled.
