Recipe for Spinach Soup

A ridiculously easy and delicious spinach soup recipe is a must try even if you hate that green. It is lightly flavored using nutmeg to give it that edge. Savour it on a cold winter day.

INGREDIENTS

  • 1 Piece Potatoes (peeled and chopped)
  • 1½ Spinach bundles (chopped)
  • ½ Cup Onions (Pyaaz) (finely chopped)
  • ¼ Cup Milk (Doodh)
  • ¼ Teaspoon Nutmeg (Jaiphal) (powder)
  • 1 Tablespoon Garlic (finely chopped)
  • Salt to taste
  • Pepper to taste
  • 1½ Tablespoons Oil

METHOD

  1. Heat oil in a deep non-stick pan and saute the onions and garlic. Add the potatoes and cook for about a minute while stirring occasionally.
  2. Add the spinach and 4 cups of water. Mix well and bring it to a boil. Once it boils switch off the flame and let it cool.
  3. Blenderise the cooled mixture till smooth and pass it through a sieve to get a smooth liquid.
  4. Add the milk, salt, pepper, nutmeg powder and allow the soup to simmer for another 4 - 5 minutes.
  5. Serve hot.
