Recipe for Paneer Rolls

Spicy and a chatpata paneer filing wrapped in whole wheat chapatis makes for a perfect snack or a light dinner. It is also popularly called as Kathi Rolls.

Synonyms : Paneer and vegetable stuffed in whole wheat chapatis.

INGREDIENTS

  • 1 Teaspoon Cumin Seeds (Jeera)
  • ½ Teaspoon Asafoetida (Heeng)
  • ½ Cup Onion (Pyaaz) (finely chopped)
  • ½ Teaspoon Ginger (Adrak) (paste)
  • ½ Teaspoon Green Chillies (Hari Mirch) (paste)
  • ½ Teaspoon Garlic ( लहसुन) (paste)
  • ½ Cup Green Capsicum (Shimla Mirch) (finely chopped)
  • ½ Cup Tomatoes (Tamatar) (finely chopped)
  • 1 Teaspoon Red Chili Powder
  • 1 Teaspoon Pav Bhaji Masala
  • ½ Teaspoon Dhania Jeera Powder
  • 1 Teaspoon Garam Masala
  • 2 Tablespoons Tomato Ketchup
  • 1½ Cups Cottage Cheese (grated)
  • 6 Teaspoons Green Chutney
  • Salt to taste

METHOD

For The Paneer Stuffing

  1. Heat oil in a broad non-stick pan, add the cumin seeds and saute.
  2. Add asafoetida and onions, mix well and cook on a medium flame till the onions turn translucent.
  3. Add the ginger, green chili and garlic paste, saute.
  4. Add the capsicum, tomatoes and saute.
  5. Add the chili powder, pav bhaji masala, dhania-jeera powder, garam masala, tomato ketchup and salt. Mix well and cook on a medium flame for 2 minutes.
  6. Add the grated cottage cheese, mix well and cook on a medium flame for 2 minutes.

To Assemble The Paneer Rolls

  1. Place the chapati on a flat, clean dry surface.
  2. Apply green chutney on the chapati, place the mixture in the centre of the chapati and roll it up.
  3. Roast the roll on a non-sick pan using a little butter till golden brown spots appear on its sides.
  4. Serve hot with tomato ketchup.
