Recipe for Baked Bean Soup

My kids love beans but they don't like soup,so this recipe is my attempt to make them have a soup with an ingredient of their choice. This simple Mexican style beans soup is a meal in itself. Make this on days when you feel like eating light.

INGREDIENTS

  • 1 Piece Baked Beans (Tinned)
  • ½ Cup Onions (Pyaaz) (finely chopped)
  • ½ Cup Tomatoes (Tamatar) (finely chopped)
  • ½ Cup Green Capsicum (Shimla Mirch) (finely chopped)
  • 1 Tablespoon Tomato Ketchup
  • ½ Teaspoon Red Chili Powder (Lal mirch )
  • ½ Teaspoon Oregano
  • 1 Tablespoon Olive Oil
  • Salt to taste
  • Pepper to taste
  • 1 Tablespoon Oil

METHOD

  1. Blend the baked beans with 1/2 a cup of water, till they are coarsely crushed.
  2. Heat the oil in a deep non-stick pan.
  3. Add the onions, capsicum and saute,
  4. Add the tomatoes, mix well and cook on a medium flame for 1 - 2 minutes.
  5. Add the beans, ketchup and chili powder, Mix well and cook on a medium flame for 1 - 2 minutes while stirring occassionally.
  6. Add 3.5 cups of water, salt and pepper. Mix well and bring it to a boil, followed by which let it simmer for 5 minutes.
  7. Garnish with chili flakes and oregano. Serve hot.
