Recipe for Rice Pancakes

There is not batter way to use the leftover rice than make these rice pancakes. This recipe uses simple ingredients that are found on any household. Make these pancakes for breakfast and serve it with tomato chutney or ketchup.

INGREDIENTS

  • 2 Cups Rice (Chawal) (cooked)
  • ¾ Cup Besan (besan)
  • 1 Teaspoon Green Chillies (Hari Mirch)
  • ¼ Cup Rice Flour (Chawal Ka Atta)
  • ¼ Cup Coriander Leaves (Dhania) (chopped)
  • ¼ Teaspoon Asafoetida
  • ½ Teaspoon Turmeric Powder
  • Salt to taste
  • Oil for cooking

METHOD

  1. Combine all the ingredients in a deep bowl and mix well.
  2. Divide the mixture in 6 equal portions.
  3. Heat a broad non-stick pan, place one portion of the mixture and spread it using the using your fingers. You may wet your hands in order to spread it comfortably.
  4. Roast it on both the side using oil, til golden brown spots appear on both the sides.
  5. Repeat the same to make 5 more pancakes.
  6. Serve hot with green chutney or tomato ketchup
