Recipe for Kesar Bhaath

Enjoy this traditional Bengali recipe of rice, flavored with the rich taste of saffron and sweetness of the dry fruits. It is often enjoyed with Machar Jhol.

INGREDIENTS

  • 2 Cups Rice (Chawal)
  • 5 Tablespoons Ghee (Ghee)
  • ¾ Cup Onions (Pyaaz) (finely chopped)
  • 1 Teaspoon Garam Masala
  • ¼ Cup Sugar
  • 2 Tablespoons Cashwenuts
  • 2 Tablespoons Raisins
  • Saffron (few strands dissolved in 1 tbsp milk)

METHOD

  1. Soak the rice in enough water for 20 minutes.
  2. Heat the ghee in a deep non-stick pan, add the onions and garam masala. Mix well and cook on a medium flame till the onions turn golden brown in colour.
  3. Add the soaked and drained rice to the above mixture, mix well and cook on a medium flame for 3 - 4 minutes.
  4. Add enough water and salt to the rice-onion mixture, mix well and cook on a medium flame for 2 - 3 minutes.
  5. Add the sugar, cashewnuts, raisins, saffron-milk mixture, mix well and cook on a medium flame till the rice is cooked well.
  6. Serve hot.
