Recipe for Sooji Aur Besan Ka Halwa

The regular gajar, besan or sooji halwa is in the past. Try this mixed-ingredient recipe of sooji and besan halwa made with a lot of desi ghee, flavored with saffron and cardamom. The dry fruits add a crunch to the otherwise melt in the mouth halwa.

INGREDIENTS

  • ¼ Cup Semolina (Rawa)
  • ¼ Cup Gram Flour (Besan)
  • 2 Tablespoons Ghee (Ghee)
  • ¾ Cup Milk (Doodh)
  • ½ Teaspoon Cardamom Powder (Elaichi)
  • 1 Cup Sugar
  • 1 Tablespoon Almonds (slivers)
  • 1 Tablespoon Pistachios (slivers)
  • Saffron (dissolved in 1 tbsp milk)

METHOD

  1. Heat the ghee in a broad non-stick pan.
  2. Once the ghee melts, add semolina mix well and cook till it turns light brown in colour while stirring continuously.
  3. Add the gram flour, mix well and cook on a medium flame while stirring continuously.
  4. When the mixture turns light brown, add the milk and cook while stirring continuously.
  5. Cover and cook on a low flame for 1 - 2 minutes.
  6. Add the cardamom powder, saffron and sugar, mix will and cook till the sugar dissolves
  7. Transfer the halwa onto a serving plate, garnish with almonds and pistachios.
  8. Serve hot.
