Give your breakfast a healthy twist with this easy and wholesome egg and vegetable sandwich recipe. Eggs not only make for a good quality protein but also give you Choline and Vitamin B to boost your energy levels and brain power.
Synonyms : Vegetable egg white omelet stuffed between 2 slices of bread.
Green Chillies (finely chopped)
Salt to taste
Pepper to taste
Heat oil in a broad non-stick pan, add the onions and cook till they turn golden brown in colour.
Add the mushrooms, mix well and cook on a medium flame till they become soft.
Add the capsicum, green chillies, salt and pepper. MIx well and cook on a medium flame while stirring continuously.
Add the beaten egg whites, mix well and let it cook on a medium flame till eggs are done.
Transfer the mixture in a plate and let it cool.
Place the slice of bread on a clean dry surface.
Place the lettuce leaf followed by a portion of the egg omelette on the slice of bread.
Cover it with another slice of bread and repeat the steps to make 3 more sandwiches.
Serve with tomato ketchup.
