Recipe for Egg and Vegetable Sandwich

Give your breakfast a healthy twist with this easy and wholesome egg and vegetable sandwich recipe. Eggs not only make for a good quality protein but also give you Choline and Vitamin B to boost your energy levels and brain power.

Synonyms : Vegetable egg white omelet stuffed between 2 slices of bread.

INGREDIENTS

  • 4 Egg Whites
  • ¾ Cup Button Mushrooms (sliced)
  • 8 Pieces Multigrain Bread
  • ¼ Cup Onions (Pyaaz) (finely chopped)
  • ¼ Cup Green Capsicum (Shimla Mirch) (finely chopped)
  • 1 Teaspoon Green Chillies (finely chopped)
  • Salt to taste
  • Pepper to taste
  • 4 Pieces Iceburg Lettuce
  • 1 Tablespoon Oil

METHOD

  1. Heat oil in a broad non-stick pan, add the onions and cook till they turn golden brown in colour.
  2. Add the mushrooms, mix well and cook on a medium flame till they become soft.
  3. Add the capsicum, green chillies, salt and pepper. MIx well and cook on a medium flame while stirring continuously.
  4. Add the beaten egg whites, mix well and let it cook on a medium flame till eggs are done.
  5. Transfer the mixture in a plate and let it cool.
  6. Place the slice of bread on a clean dry surface.
  7. Place the lettuce leaf followed by a portion of the egg omelette on the slice of bread.
  8. Cover it with another slice of bread and repeat the steps to make 3 more sandwiches.
  9. Serve with tomato ketchup.
