Recipe for Popcorn Soup

Bored of having regular soup? Try this very unusual combination of soup and pop corn which is super hit and one of its kind. It will surely become kids favourite and raise eye brows of all the guests at home. Also the pop corn used for garnishing this soup gives the soup a great mouth feel.

INGREDIENTS

  • 2 Tablespoons Butter (Makhan)
  • 1 Onions (Pyaaz) (finely chopped)
  • ½ Teaspoon Garlic ( लहसुन) (finely chopped)
  • ½ Green Capsicum (Shimla Mirch) (finely chopped)
  • ½ Cup Corn Kernels (मकई के बीज) (boiled)
  • 1½ Cups Cream Style Corn (Tinned)
  • 1 Cup Milk
  • 1 Teaspoon Corn flour
  • 2 Cups Vegetable Stock
  • Salt to taste
  • Pepper to taste

To Garnish

  • Popped Corn (popcorn )

METHOD

  1. Melt butter in a pan and saute the onion, garlic and capsicum until soft. Add the corn kernels and keep aside.
  2. Mix the cream style corn and milk mixed with cornflour and lastely add the vegetable stock, add this to the onion mixture, stirring continuously.
  3. Season with salt and pepper and simmer the soup for 5-7 minutes.
  4. Serve the soup in individual bowls and garnish with popped corn in each bowl.
